Lemon curd

Stamattina è venuta a trovarmi la mia amica Gabriella. Abbiamo preso il tè ed io le ho fatto assaggiare il lemon curd, strepitosa cremina inglese da spalmare sul pane tostato o da usare per farcire torte, che ho fatto con i limoni del mio giardino. La prima volta l'ho assaggiata in Inghilterra durante il viaggio di nozze e ogni volta che sono tornata a Londra l'ho ricomprata da Fortnum & Mason's, ma qui in Italia non riuscivo a trovarla. Così ho deciso di farla da me. Alla mia amica è piaciuta tanto che le ho regalato uno degli ultimi due barattoli rimasti. Allora mi è tornato in mente che ve ne avevo parlato ma non avevo mai postato la ricetta.  This morning my friend Gabriella came to me ho have a tea. She tasted my gorgeous homemade lemon curd I made with the lemons of my courtyard. It reminds me that I told about the lemon curd before, but I've never posted the recipe. First time I tasted the lemon curd was in England during my honeymoon and each time I went back to London I bought it at Fortnum & Mason's. In Italy it's difficult to find it, so I decided I do it by myself.
Quelli che vedete sono i miei limoni ed ecco la ricetta, trovata su Giallo Zafferano, che è esattamente uguale a quella inviatami da una amica inglese del forum di Woman and home. Per 100 gr di burro servono 220gr. di zucchero, 3 uova intere e 2 rossi, scorza grattugiata e succo di 3 limoni, una bustina di vanillina, un cucchiaino di amido di mais. Mentre in una casseruola fate sciogliere a bagnomaria il burro con zucchero, in una terrina lavorate tutti gli altri ingredienti insieme, con la frusta a mano o lo sbattitore elettrico. Lavorate un attimo anche il burro con lo zucchero e, sempre a bagnomaria, unitevi il contenuto della terrina: l'acqua del bagnomaria non deve mai bollire molto, appena tremolare. Continuate a cuocere,  mescolando ininterrottamente, per circa 20 minuti, Appena la crema velerà il cucchiaio, appena densa, allora potrete spegnere il fuoco e invasare. Appena freddo di conserva in frigorifero, va consumato entro 1 mese, vista la presenza delle uova.

In the first picture you see my lemons, on the left my lemon curd's cooking. Here is the recipe I found on  Giallo Zafferano (an italian website with lot of recipes), and it' the same of the one I received once from an english mate of the Woman and home forum. For 100 gr butter you need 220gr of sugar, 3 eggs and 2 yolks, 3 lemons (juice and grinded peel), vanilla (just a little bit), 1 tea spoon of  maizena (starch). While in a double saucepan you melt butter and sugar,  in a bowl mix all the other ingredients together with the electric mixer or with a whisk. Then put this mixture into the saucepan (always cooking in a double saucepan) and continue to mix and be careful that the water doesn't boil. Cook for 20 minutes. The lemon curd is ready when the cream is less liquid. Put into the tin and once the lemon curd is cold, store in the fridge. You must eat it within 1 month, Beause of the eggs.

Ed ecco i miei barattoli di lemon curd. Vi consiglio di provarla. Una normale torta margherita con due cucchiai di lemon curd nell'impasto, diventa una prelibatezza.
And here you see my jars of lemon curd. Try it! A simple cake with 2 tablespoon of lemon curd in the mixture becomes a delicacy.
